Saag
Ingredients:
- 250 gms jute leaves
- Three red chillies
- Half teaspoon mustard seeds,
- Pinch of turmeric powder
- Salt to taste
Wash the leaves and chop them fine. Heat half a spoon of mustard oil in an iron wok or frying pan. Add mustard seeds, wait till they begin to crackle, then add the red chillies, turmeric powder and salt. Put in the leaves, stir and cover the wok or pan. Cook in low flame stirring occasionally till the sag turns tender.
Jute pakora
Make a batter with either rice flour or gram flour mixed with a pinch of poppyseeds, chopped onions and salt. Dip single leaves of jute in the batter and fry. Green chillies and coriander leaves can also be added to the batter.
