Fried bamboo shoot: Fry half-a kilogramme of bamboo shoot. Slice and then wash them. Thereafter, fry chopped onions and five green chillies. Add the shredded bamboo, along with turmeric and salt to taste. The dish is ready.
Ironba: Pressure-cook five potatoes, 100 grammes of fresh/fermented bamboo shoot, five grammes of French beans and cabbage. Mash the potatoes to make a fine paste. Add three grammes of crushed green chillies, along with the other ingredients and salt to taste. Garnish with coriander leaves and serve.
Rotuai: Boil 500 grammes of tender bamboo shoot and 50 grammes of green chillies. Separate the chillies, and grind them along with salt to taste. Chop the shoot and mix them in the chilly paste. Serve with rice.
Akibiye: Boil two-and-a-half cups of water, and add 500 grammes of chopped colocasia ( arvi ) in it. Cook till they are tender. Thereafter, add 100 grammes of chopped bamboo shoot and continue boiling till the mixture becomes thick. Add salt to taste and serve.
Soup: Slice a few tender shoots of bamboo. Soak them in limewater till they soften. Then cook them in water along with garlic and onions. Add salt to taste and serve hot.
