Swordfish is a popualr dish among seafood lovers everywhere. For that and other reasons, its numbers are dwindling at an alarming rate, especially in the North Atlantic. So it is heartening that leading chefs at more than two dozen leading restaurants across US have joined a cooperative effort to help the species.
